Gluten Free Goodies

Well you know how much I love gluten free goodies. We sell our Gluten free baking at our Saturday market and our once a month Wednesday market.  It's been awhile since I posted so to make it up to you I've included lots of photos.

Here are some fun gluten free things I've made lately:

Orange Festival in France

A friend sent this to me and  thought it was pretty neat.

Yummy Food Inspirations

Hello,

Thought I'd post some of my latest food creations. This is a lovely lunch my sister made for me the other day (vegetable soup, with hummus and crackers):

Next up is my mom's divine gluten free marshmellows (I'll be making the next batch very soon). These did not last very long:

Gluten Free Marshmellow
The outside is dipped in Callebaut cocoa and the flavour is coffee/maple. These were so divine tasting.

Last up is a gluten free fruit tart. We are selling our gluten free baking at Market Square in a few weeks and are experimenting to find the perfect crust. Of course they have to be eaten afterwards so I was happy to oblige.

My latest food creations

Well I'm continuing with my healthy eating and this is the start of month four for me. I've come up with so many tips to stay healthy but I do have days when it is so difficult and I'm so tempted to go back to old unhealthy patterns but I usually have a few tricks up my sleeve to overcome temptation. I either
a) get busy and do something to take my mind of the temptation b) look at my food journal and see how far I've come and how long I've been eating well c) let the unhealthy temptation linger for a bit and whine to myself that I can't give in which is futile and happens less rarely these days d) whine to my sister to motivate me and e) eat something healthy if I'm really hungry and it's not just a craving.

My sister and I are always experimenting with gluten free as we sell gluten free baking at our local market along with bath and beauty products. We are always trying to come up with ideas for lower calorie gluten free food.

Here is a pizza we had a few weeks ago:

The cheese we used is dairy and soy free as well and one of our secret ingredients. If memory serves correct this one is about 224 calories per slice.

Here is the newest pizza we had this past week-end:

This one has even fewer calories and comes in at around 137.5 calories per slice and it was so divine and light. I didn't feel sick afterwards like I do with traditional pizza.

Here is one of my favourite breakfasts (it's egg white with soy and dairy free cheese along with cafe lib (caffine alternative) or sometimes a hot cocoa which is my weakness.

I find this breakfast filling due to the protein in the egg whites. It's hard for me not to have a hot drink in the morning and I love Caf Lib (it's my favourite out of all the caffine alternatives I've tried) and use my milk frother to whip up my soy milk and then add flavouring. The hot drink varies as I sometimes have hot cocoa (my favourite but I'm allergic to it so I have it in moderation) and on rare occasions coffee.

My sister and I decided to surprise my mom with a lovely custom blend of flowers we chose.

The view outside my house

So I woke yesterday and saw this surprise out my window:

We don't get snow very often so it was a bit of a shock to say the least. When my family and I moved here there was snow similar to this. It cripples the city and lots of schools and offices are closed.

Being from Ontario I grew up with snow and love how beautiful it looks. It is bright and casts a beautiful glow which I quite enjoy. It is bitter cold out and hard to drive in so I think most people want it go away.

A Random Post of Sorts

Today I thought I'd do a random list of things I like and yes all buy one is food related.

As of late November I've been on a health kick. Sure I want to lose weight but I also want to feel better and eat better. I've come to realize that losing weight, feeling better and looking good are a process. It's not instant (well at least losing weight isn't instant for me but maybe for some it comes off quickly).

I've also come to realize I can't tolerate gluten so I eat gluten free now. My sister and I sell gluten free goodies at our local market 6 months a year so we love experimenting with new recipes.

I've talked about this before but my favourite Christmas gift is my new milk frother. I use soy milk and it comes out great. This is one I made the other day (it's Cafe Lib in there with Vanilla a caffine alternative):

A divine chocolate gluten free cupcake (I did not make this one but it tasted great and inspired me):

Here is a gluten free cupcake I made with a vegan frosting that was tricky to work with. The cupcake was Vanilla Bean with matching frosting:

I used a new recipe and filled the muffin tins rather low. I'll fill them much higher next time and tweak my vegan icing recipe. It was delish.

Now for a break from food, here is a night where the sky looked heavenly outside my house:



A divine salmon dinner my sister made for my birthday awhile ago (I had tried it at a restaurant and she made an exact replica of it). It was to cry for:



The last mouthwatering photo I have is of a gluten free, vegan birthday cake that was for me. My mom made it and except for the topping the cake is sugar free. It blew me away it was so good. My mom is amazing at gluten free baking and created her own gluten free four blend that we may sell at our market this year:

Okay now I'm feeling hungry and for dinner I'm having gluten free pizza.
